Saddle animal can come from a variety of Spanish terms, including "caballo," "caballeria," or "cabalgadura" and refers to those animals used for riding, almost always horses (but sometimes mules). Other animals, generally mules, were used as pack animals to carry supplies and baggage. The horses used by Anza and others in the military were descended from those brought to the New World from Spain, beginning in the 16th century. (D. G.)
